An Easy Crepe Recipe for St. Thérèse’s Feast Day


Hello and Happy Saturday!

Today is the beloved Thérèse of Lisieux’s feast day. Because Stephen is working, we won’t be doing much to celebrate this time around, sadly. Although historically I like to go big for my HOMEGIRL.

In any case—here is an easy crepe recipe (from France) to help you celebrate our precious Thérèse.

If you have time, perhaps consider reading an excerpt from her diary or saying one of these little prayers for her intercession. And of course, a bouquet of roses is what she is known for!

EASY CREPE RECIPE:

INGREDIENTS:

  • 4 Eggs
  • 2 Cups of whole milk
  • 1 Cup of flour
  • 2 Tb of sugar
  • 4 Tb of butter
  • 1 Tsp of vanilla
  • pinch of salt
  • Extra butter for greasing the pan

TO MAKE:

  • Combine all ingredients
  • Heat up a medium to large pan on the ‘low’ setting
  • Once pan is warm, add about a Tb of butter
  • Once the butter is melted, add about half a cup of batter to the pan
  • Allow to cook for about 3-4 minutes or until lightly brown, then flip and cook for another 2-3 minutes until both sides are a light brown.
  • Remove crepe and add a little more butter to pan if needed
  • Repeat until batter is all gone
  • You can fill your crepes with ham/prosciutto, and your favorite cheese (do this while still in the pan until cheese is melted) OR
  • Simply add your favorite sweet topping after cooking (honey, fruit, Nutella, etc.).
