Monday Five: Blueberry Muffins & Other Things I’m Excited About This Week


Happy Monday!! The sun is shining here in FL and it’s supposed to get up to 75 degrees this afternoon, which makes my heart happy.

This weekend was a busy one. We had a wedding shower a couple hours away which took up pretty much all of Saturday. It was fun but I also would have been ok with a little bit more down time! Yesterday I cut Stephen’s hair for the first time. It didn’t go as poorly as it could have, but it’s lucky he’s pretty relaxed about these things… hopefully I will get better with practice.

We also went fishing for the first time which was fun! It was a pretty day and there is a dock relatively close by which made it easy to go out for a couple of hours in the afternoon. Even though we didn’t catch anything and Stephen’s line got stuck at the end, it was nice just to be outdoors together.

Also, sorry about missing last weekend! I’m trying to be more consistent so hopefully I’ll get a few more in a row. Here is this week’s five:

SWEET POTATOES
My mom is an expert at coming up with effortless and delicious recipes. This time she introduced me to super fast sweet potatoes that are SO yum. You just put a few holes in the sweet potatoes all around them with a fork, put them in the microwave for about six minutes. Then you let them cool for a minute or so, slice them in half and scour them with the fork. You can put butter and Parmesan cheese on top and then stick them in the air fryer or broiler for another five minutes. Done! So yummy/satisfying/nutritious.

BLUEBERRY MUFFINS
We’ll just get all the food ones out of the way now. I’ve made these muffins twice now in the past week or so and am a huge fan. They are hearty, good for you and tasty! They are perfect for an easy breakfast or as a snack. Plus very easy to make, too. Win win win.

WHITE BOARD
This sounds pretty lame, that’s ok. For Valentine’s Day, I surprised Stephen with a white board for us to keep track of our to-do list, schedule and other things. It may not sound like the most romantic gift in the world, but he was so excited. We always have an ongoing list of things we need to get done, groceries, meals, gifts we need to buy, goals for the week… this allows us to put all of that in once place instead of a handful of different sticky notes. Stephen is a tactile person, so writing things down and checking a physical list is easier for him and more satisfying. I’m also appreciating having all the information in once place.

CLOTH “PAPER” TOWELS

This is something I had been thinking about for a while when my in-laws started actually putting it into practice. They found these cloth “paper towels” that work well and help save money! Stephen and I started using them about a month ago and have been pleased with the results. We still use real paper towels from time to time, but definitely a LOT less.

DAILY FASTS

Another idea our in-laws introduced us to is giving up a small thing every day. This just helps detach from certain things, build discipline, and hopefully grow in virtue! Monday-Saturday we give up different things each day. Mine are mostly around technology (no video, audio, black and white screen, etc.) but the hardest has definitely been no sweets…gah. On the other hand, since it’s only one thing per day, it’s a LOT easier than trying to do all of this at once.
